Potatoes and kale salad

Potatoes salad with kale, avocado and sunflower seeds that will make you rethink how delicious salads can actually be.

Ingredients for 2 people


Ingredients

160g potatoes 70g curly kale

1 small avocado

200g butter beans

3 sun dried tomatoes

1 tsp pine nuts 1 tsp olive oil

1 pinch of salt

1 pinch of pepper


Let's start cooking

1. Boil potatoes (I usually cook them for 12 minutes in the pressure cooker - otherwise boil for 30-40 minutes until a fork pokes through) 2. Roast kale in the oven at 200 degrees for 5 minutes, don't burn (if you like, add chilli flakes)

3. Boil butter beans or drain from can if using pre-boiled beans

4. Chop sun dried tomatoes

5. Cut avocado in small cubes 6. Mix everything in a bowl and serve warm or cold during the summer
