Oats and Raisins Cookies

The cinnamon and raisins fragrance that will make your kitchen smell delicious... Here's a quick recipe for a weekend afternoon or a mid-week sweet treat.

Ingredients

  • 100g plain flour

  • 180g porridge oats

  • 70g ground almonds

  • 5 tablespoons of maple syrup

  • 2 tablespoons of almond milk (or oat milk)

  • 5 tablespoons of melted coconut oil

  • 1 teaspoon baking powder

  • 1 pinch of salt

  • 1 tablespoon of sunflower seeds

  • 1 tablespoon of pumpkin seeds

  • 1/2 tablespoon of linseeds

  • 1/2 teaspoon of cinnamon

  • a handful of raisins (could swap with chocolate chips)


Let's bake

Preheat the oven to 180C fan setting.


Place the oats, flour, ground almonds, baking powder, mixed seeds and salt into a large bowl and mix well to remove lumps. Add in the maple syrup, melted coconut oil and milk and mix until well combined.


Scoop out balls of dough using your hands and a spoon, and roll into ball shapes.

It roughly will make 12-15 cookies depending on how big or small you want to make them.


Place the balls onto a lined baking tray and flatten with your hands to form cookie shapes.


Bake for 15 minutes until golden, then cool before serving.
