Oat and Blueberries Flan

Possibly one of my favorite sweet recipes! This flan is so delicious and a great source of energy for your breakfast or snack. It's packed with the best nutrients coming from nuts, blueberries and oats. I prefer the vegetarian option using eggs in terms of taste, but it's also doable without using eggs, replacing them with chia seeds and water or mashed banana.

Ingredients (serves 8 portions)

  • 170g oats

  • 70g pecan nuts (you can also use almonds, walnuts or hazelnuts)

  • 2 tsp cinnamon powder

  • 1 tsp baking powder

  • a pinch of salt

  • 350ml unsweetened almond milk

  • 100ml maple syrup

  • 2 eggs (or replace with any of the following alternatives, click here)

  • 2 tbsp coconut oil

  • a pinch of vanilla powder or essence

  • 250g blueberries (fresh or frozen)

Let's start baking

Pre-heat the oven to 190°C

Mix the liquid ingredients in one bowl and the dry ingredients in a different bowl

Take a rectangular baking tin and cover it with some coconut oil

Sprinkle the tin with about ¾ of the blueberries, then cover with dry ingredients and lastly pour liquid mix on top. Add the rest of the blueberries on top and bake for 40-45 minutes.

Serve warm and enjoy!

Tips

You can use different nuts, as suggested above, and different fruit! Try raspberries and peaches, strawberries or blackberries in summer, apples and figs in autumn.
